I seriously cannot believe October 1st is here. Where did September go?!
I will say that I am so excited because Fall is my favorite season. While I love the cooler temps, pumpkins, scarves, boots, and football, my favorite thing about Fall is that it leads into my absolute favorite time of all… THE HOLIDAYS.
So to kick off my favorite season, I made my favorite pumpkin bread. No this is not clean or healthy by any meals but my philosophy is 80/20 applies here. And I may use up all of my 20 on just this bread. Yes it’s that good.
I’ve posted this recipe before but I just think it merits posting again. This stuff is SO good and so easy.
I’m sure there are a million other pumpkin bread recipes out there but do yourself a favor and try this one.
My husband is not one for desserts, cakes, or any sort of “sweet” and he told me four times. Yes FOUR, how good this bread was. So my suggestion to you is make it. As soon as possible. Thank me later.
2/3 Cup Butter or Margarine
2 2/3 cups sugar
1 16 oz. can of pumpkin (I think Libby’s is the best!)
2/3 cup water
3 1/3 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. ground cinnamon (i used more like 3 tsp haha!)
a few sprinkles of nutmeg
a few sprinkles of all spice
a splash of vanilla
Pre-heat oven to 350 degrees. Grease the bottoms and sides of two loaf pans.
Mix butter and sugar. Add in the eggs, pumpkin, splash of vanilla, and water.
Blend in flour, baking soda, salt, baking powder, cinnamon, and spices.
Pour into pans. Bake 1 hour and 10 minutes or until a toothpick comes out clean.
