It’s been awhile since I’ve tried a new recipe, but the other night I whipped up my own version of this recipe. I initially found it on Pinterest, of course 🙂
Anyway, I changed it up a bit to fit what we had and our tastes but it was DELICIOUS! Robbie (the ultimate critic) loved it. We added chicken, because my husband won’t have a meal without meat, but you certainly don’t have to. So here’s what we did:
3/4 box Rigatoni noodles (I even used whole wheat and Robbie didn’t even notice!)
1 jar alfredo sauce
1 8 oz. container of sour cream
1/2 cup Parmesan cheese
1 1/2 cups Mozarella cheese
*we roasted a chicken the night before so I used the leftovers*
Italian Bread crumbs
Prepare noodles according to their directions, then drain. Mix all ingredients together, except the bread crumbs, and spread into an 8×8 baking dish. I used a small one beings it’s just the 2 of us. I sprinkled the breadcrumbs on top with a little more cheese.
Bake at 350 degrees for 30 minutes or until bubbly. Then I moved it to the top rack and put the oven on broil for probably 2 minutes until there was a nice little “crust” on top.
